Abstract
Vino je alkoholno piće koje se proizvodi fermentacijom grožđa, ploda biljke vinove loze, ali se može dobiti i od drugog voća, a ponekad i od žitarica. Jedan je od najstarijih poljoprivrednih proizvoda. Kemijska uravnoteženost grožđa omogućava prirodnu fermentaciju bez dodataka šećera, kiselina, enzima, vode ili bilo kojih drugih sastojaka. U procesu fermentacije, koji se još naziva i alkoholno vrenje, kvasac se hrani šećerom iz grožđa i pretvara ga u alkohol i ugljični dioksid, uz oslobađanje topline. Vino je jedno od najpopularnijih alkoholnih pića u svijetu, a smatra se i jednim od najvažnijih sastojaka europskih i svih mediteranskih kuhinja.
Abstract (english)
Wine is alcoholic drink which is produced by fermenting grapes, fruits by wine's vine, but it can be produced from other fruits and sometimes from cereals. It is one of the oldest agriculture products. Chemical balance of grapes allows natural fermentation without adding sugar, acids, enzyms, water or any other ingredient. In process of fermentation, which is also called alcoholic boil, yeast is feeding with sugar from grapes and it turns it to alcohol and carbon dioxide, with releasing heat. Wine is one of the most popular alcoholic drinks in the world, it is even considered one of the most important ingredients in european and every mediteranian kitchens.
