Abstract
Mlijeko i mliječni proizvodi se tradicionalno smatraju hranom koja ima adekvatno nutritivno djelovanje i povoljan učinak na zdravlje. Uz tradicionalne mliječne proizvode suvremena mljekarska industrija potrošačima nudi i modificirane ili obogaćene proizvode koji povoljno djeluje na zdravlje ili imaju bolje nutritivno djelovanje. Cilj rada bio je istražiti kako potrošači prepoznaju zdravstveno djelovanje i nutritivni učinak mlijeka i mliječnih proizvoda na organizam, te učestalost konzumacije kao dio svakodnevne prehrane. Za potrebe istraživanja percepcije potrošača o učestalosti konzumacije mlijeka i mliječnih proizvoda i poznavanju njihovih zdravstvenih dobrobiti, sudjelovao je 215 ispitanika. Istraživanje je provedeno prikupljanjem različitih podataka o ispitanicama putem prigodno pripremljenog anketnog upitnika kojeg su ispitanici osobno ispunjavali, a rezultati su analizirani prema starosnim skupinama, odnosno generacijama
Abstract (english)
Milk and dairy products are traditionally considered as a food that have adequate nutritional impact and beneficial effect on health. In addition to traditional dairy products, contemporary diary industry also offers consumers modified or enriched products that have a beneficial effect on health or have a better nutritional effect. The aim of this study was to explore how the consumers recognized health effects and nutritional effect of milk and dairy products on organism and frequency of consummation as part of the daily diet. To the purpose of the research the perceptions of consumers about the frequency of consummation milk and dairy products and knowing their health benefit, has included 215 examinees. Research was conducted by collecting various data about examinees through prepared questionnaire which was personally fulfilled by each examinee and the results are analyzed according to age groups or generation.
