Abstract
Pivo je pjenušavo alkoholno piće koje ima mnoge nutritivne, zdravstvene i ekonomske vrijednosti, pa ga mnogi nazivaju tekućim kruhom. Njegova proizvodnja nije započela tek sada već traje gotovo pet tisuća godina, a tek u 18. i 19. stoljeću, proizvodnja postala masovnija i kompleksnija. Danas se suvremena proizvodnja uglavnom odvija u industrijskim pogonima, a nešto manje u obiteljskim i drugim sličnim manjim pivovarama. Proizvodnja piva čini jedan vrlo kompleksan proces koji se sastoji od nekoliko raznih faza, a kako se mora provoditi u adekvatnim uvjetima, valja postaviti i odgovarajuće mjere zaštite osoba koje borave u prostorijama gdje se pivo proizvodi. Stoga, poslodavac je dužan poštivati načela zaštite na radu i donositi procjene rizika, u svim pogonima proizvodnje piva. Stoga, predmet rada je opisati i objasniti faktore rizika na primjeru mikropivovare u Karlovcu.
Abstract (english)
Beer is a sparkling alcoholic beverage that has many nutritional, health and economic values, so many call it liquid bread. Its production did not begin only now but lasted for almost five thousand years, and only in the 18th and 19th centuries did production become more massive and complex. Today, modern production takes place mainly in industrial plants, and to a lesser extent in family and other similar smaller breweries. Beer production is a complex technological process that includes several phases, and as it must be carried out in adequate conditions, it is necessary to set appropriate measures to protect people living in the premises where beer is produced. Therefore, the employer is obliged to respect the principles of safety at work and make risk assessments, in all breweries. Therefore, the subject of this paper is to describe and explain the risk factors on the example of a microbrewery in Karlovac.
