Abstract
U radu je opisana implementacija HACCP sustava u bolničku kuhinju. Rad prezentira HACCP sustav, povijest sustava te zakonske osnove HACCP sustava u Hrvatskoj. Nadalje, objašnjavaju se opći pojmovi vezani uz razumijevanje HACCP-a, potom prikazuje implementaciju HACCP-a u bolničkoj kuhinji. Uz tablične prikaze, opisane su sve faze implementacije HACCP sustava u procesima prijema, skladištenja i pripreme hrane u bolničkoj kuhinji.
Abstract (english)
The implementation of the HACCP system in a hospital kitchen is described in the paper. The work of the HACCP system is presented as well as its history and legal regulations in Croatia. Furthermore, general terms needed for understanding the system are explained and then its implementation in the hospital kitchen is shown. Through tabulations, all phases of the implementation of the HACCP system in the processes including admission, storage and preparation of food in this institution are described.
