Abstract
Pivo je pjenušavo alkoholno piće karakteristična gorka okusa i arome po hmelju, dobiveno alkoholnim vrenjem pivske sladovine s pivskim kvascima. Glavni sastojak pive je voda, a slad je osnovna sirovina za proizvodnju piva. Proces proizvodnje piva je složen, u svim pivovarama odvija se na sličan način pa tako i u Mikro pivovari Veleučilišta u Karlovcu. Faze proizvodnje piva su mljevenje slada, postupak ukomljavanja, cijeđenje, kuhanje sa hmeljem, hlađenje sladovine, aeracija sladovine,fermentacija, filtracija i punjenje piva. Sigurnost i zaštita na radu je bitan faktor u proizvodnji piva kako bi se stvorili sigurni uvjeti rada i očuvanje sigurnosti i zdravlje radnika i okoliša. Da bi se uklonila ili smanjila opasnost potrebno je slijediti pravila sigurnosti i zaštite na radu i upotrebljavati osobna zaštitna sredstva.
Abstract (english)
Beer is a sparkling alcoholic beverage with a characteristic bitter taste and aroma of hop, produced by the alcoholic fermentation of beer wort with brewer's yeast. The main ingredient of beer is water, and malt is the basic raw material for beer production. The process of beer production is complex, but the process is similar in most breweries, including the Microbrewery of the Karlovac University of Applied Sciences. The stages of beer production are milling, malting, squeezing, hop cooking, wort cooling, wort aeration, fermentation, filtration and bottling. Security and safety at work is an essential factor in beer production in order to create safe working conditions and preserve the safety and health of workers and the environment. In order to eliminate or reduce the danger, it is necessary to follow the rules and regulations for safety and protection at work and use personal protective equipment.
